The work sounds simple but is a highly specialised trade that is over a century old and is an integral part of the Mumbai City's culture. The origin of this service was when India was under the British Rule. Many British who came to the colony did not like the local food. Hence a service was set up bring the lunch to them to their work place straight from their home. This was started in 1880 by Mahadeo Havaji Bachche a migrant from Maharashtra. He started to deliver lunch boxes with around 100 men. In 1930 he formally attempted to unionise the dabbawalas.

A charitable trust was registered in 1956 under a name of "Nutan Mumbai Tiffin Box Suppliers Trust" In the year 1956 a commercial arm of the trust was registered. It was registered as Mumbai Tiffin Box Carriers Association. Currently the President of the association is Raghunath Medge. The consumer's today include Indian businessmen and the service has been extended to serve cook food (Done through several chain of hotels they have a relationship) and deliver them along with the other lunch boxes. Mumbai is India's most densely populated city with huge flow of traffic. The area is populated at the rate of 19373 persons per Km2.

The journey for many workplaces is lengthy and most people travel by train. Many prefer to get their home food delivered rather than going home for lunch or paying for a meal at a cafe. The cost is a monthly fee of roughly around INR 250 ($5 a month). The family of the consumer would cook the food and pack it. This would be collected by the dabbawala and then delivered to the consumer's work place. After the lunch time is over the boxes are collected again and delivered back to the consumer's house. The dabbawalas transport modes are walk, bicycle and train. The boxes have a coloured symbol on it.

The symbol and colour of the box is used to identify the destination of the box. The average employee has a maximum schooling up to 8th grade. The area covered is 60 Kilometres. Total number of employees is 5000. They roughly deliver 5000000 (5 million) boxes per annum. Time taken to deliver them is 3 hours. The error rate that they achieve is 1 in 16 million transactions, which is Six Sigma performance. They do not use any technology to function. The price for the service does not vary from consumer to consumer. It's the same for all even if the weight, distance and space would vary.

The company's turnover is INR 480 million approx (US $ 12 million). The best part or feature of this company is that even the nature cannot stop them from providing their service to its consumer. The company now has started to take orders on through Short Messaging Service. They have also started their own Website. They currently operate in Mumbai and Pune only. They are looking at expanding their horizon to different parts of the country but unable to set up due to the local infrastructure not being sufficient. Six Sigma was introduced to the world of manufacturing in the early 1980's by Motorola.

It was a revolution in the area of Quality systems used in Business. It is a methodology of problem solving and focusing on optimisation and cultural transformation. The goal is achieved by the usage of an extensive set of tools and statistical and advanced mathematical tools along with well defined methodology that produced significant results quickly. This in turn would lead to a cultural transformation in the organisation. The roots of Six Sigma go back to Carl Fredrick Gauss (1777-1855) who introduced the concept of normal curve or distribution.

Later in 1922 Walter Shewhart, introduced 3as a measurement of output variation and also mentioned that process intervention was needed when the output went beyond the limit. The defect rate at this level was 2600 per million, which was permissible for most organisations in early 1980's. Later when the introduction of mass produced miniature electronic goods like transistors, televisions hit the global market for mass market consumption this level was not enough to sustain the profitability of the organisation. The Japanese manufacturers were able to produce higher quality goods at lower cost.
